I know Gruyere is great in gratin-but is it suitable for a wine tasting? I have not tried it unmelted… : )

I have a couple of bottles of Auslese and Eiswein-does this pair well?
Swiss Gruyere is a very versatile cheese.
It is also a great table cheese with a nutty, pleasant flavor.
It's also one of the best melting cheeses( Fondue, on top of onion soup, and as you said Au gratin).
It goes great with Rieslings and some reds( not the stronger ones however).
Maybe a nice Pinot Noir.
Good choice for a cheese.

Always serve with fruits such as grapes,brown pears and apples( those are the best for Gruyere) or Membrillo( quince paste) found at almost every cheese counter.

The other day I was grocery shopping & I noticed that the Velveeta wasn't refriderated. I mean it is cheese right? Shouldn't that be cold? All the other cheese is kept cold.
After Velveeta is opened, it needs to be refrigerated. Remember, you're dealing with a "cheese product" and not a pure cheese. It's up there with some of the "jarred" cheeses, like the ones Kraft puts out and the ones that come in spray cans.

I'm wondering if the packaging doesn't simply say no hormones what so ever, then they can work around it and inject extra natural hormones (derived from other animals) into the cow.
I'd prefer to not have the extra hormones thank you much! Should I be looking for organic chees that say No Hormones (at all)
I said "Extra" hormones…as in injected.
Actually I think it might be possible to derive hormones that would increase milk output from other animals
For years the estrogen that menopausal women took for hormone replacment therapy (HRT), was dervied from horse's urine. Neat, huh? Yuck!
I'm afraid it seems ALL cow's milk will have some hormones– just like breastmilk contains some hormones. But I believe most organic cheese is made from milk that comes from cows that have not received "extra" hormones in order to make them produce more milk.
Personally, we've chosen to find local, raw milk. Everything in the grocery store now is ultra-pasteurized, which means your milk could stay "stable" at room temperature for SIX MONTHS! That's right, you're organic milk doesn't even need to be refrigerated if it's ultra-pasteurized. That's just creepy and gross to me. Yuck. You might want to look into it if you're drinking organic milk for health reasons.
