How do you make homemade cheese?

My wife wants to make goat cheese, so she is looing for a pretty easy homemade recipe.

here is one for a chese-like cream; it is more or less like this: put 3 cups of milk in a pot, heat until it is before boiling, then put some lemon juice, then wait. After that, you put the milk into a colander and wait until the water goes. you get a soft flavored cheese like cream

Where can I buy wholesale whole milk for making homemade cheese? I live in Toronto, ON.
jc, thank you for your comment and advise. I have never made cheese myself and wanted to try. I will look around for dairy farms and hopefully find some. If you have any resources that might give me some info on making cheese I'd greatly appreciate.

OK,
There are laws about purchasing unpasteurized milk.
I think the laws are the same( or nearly the same) in Canada and the USA.
The sale of unpasteurized milk is illegal unless( in some states or areas) the producer marks the container "for animal consumption only"( we use to sell this in Whole Foods in Orlando( discontinued).
There is a way around it though.

If you own a farm and own the cows you can use unpasteurized milk ( for your own consumption).
So dairy farms are now selling a single share of that farm to people, which makes them a part owner which allows them ( legally) to purchase the milk.

Search around, it's pretty easy.
( Dairy farms( then your area).
